Genetic studies have shown that these large animals are the descendants of cattle Viking invaders brought to England between 449 and 660AD. They have a dark red coat and highly marbled meat with strong, deep flavour.

n the 1920s they were the second largest breed in the UK, but because they aren’t suited to the rigours of modern mass meat production their numbers have dropped considerably.
