Our favourite breed for steak (and Heston Blumenthal’s). These mighty animals have a rich depth of flavour and an open texture perfect for grilling over real charcoal.
They were the dominant breed in Eighteenth Century Britain, but because they’re not suited to the horrors of mass beef production their numbers have diminished considerably.
It seems strange, but by eating them you are helping to secure their future – the more demand there is, the more likely farmers are to rear these magnificent animals.
